Wine Crock for Communion Wine
The wine crock and recipe card are part of the archives of St. James, Fenelon Falls.
The St. James Archival Committee came upon a large ceramic container that was used to make the wine at St. James. The original recipe card still sits in the container.
The recipe calls for:
20 pounds of fresh fruit mixed with 1 1/2 gallons of water and 10 cups of sugar. Put the grapes in the crock and pour boiling water over the grapes. Place in a convenient area to cool and then press with hands. The lid (which broke at some point) remains on for 3 days. Remove lid and cover with a cloth. Leave a week longer in the cock then. Strain and bottle leaving uncorked until the fermentation is over. Then strain and rebottle corking tightly. Keep in cool place.
