In 1881, Antoine Labelle took part in a farm co-operative to produce large quantities of butter for sale. In May 1881, the newspaper Le Nord announced: “Our butter factory is operating to the greatest satisfaction of the administrators and managers, under the able direction of Messrs Beaudry and Bryant. The butter is of superior quality and will fetch top prices on the market. Sales have already begun to citizens of the town for 25 and 26 cents. We shall provide in a future issue details and the most complete information possible about this farming industry that will surely change the face of this parish. The farmers of Saint-Jérôme are very satisfied with the results thus far, and many say they plan to increase the size of their herds and take better care of their cows.” Urged on by their parish priest, Saint-Jérôme’s farmers had taken their first tentative steps into commercial agriculture.
