Léon Tremblay: There were some crucial times when we absolutely had to have flour, but Daniel was working alone. And we had to use the passing-through method because the gates were leaking and we didn’t have enough water. We told Daniel: “Leave the bagging, you just make flour and we’ll bag.” So we Board members spent the whole night bagging flour. Friends would come to give us a hand, and we would spend the whole night filling flour bags. We did that at least twice a year. It was a lot of fun. We kept the coffee flowing, of course, but we enjoyed it. It was a lot to ask of people, but it was the only way we could keep production high enough.
