Nicole Carignan Lefebvre: In 2000, I was elected to the Municipal Council as a councillor for Vieux-Saint-Eustache. I was asked to sit on the Board of Directors again, which I did. I realized that the festival had grown and that there were long lines of people waiting to get galettes. At one of the board meetings, I said: “Maybe the city councillors could help out and have our own booth at the back of the manoir Globensky.” And that’s what we did, starting in… was it 2002? I can’t remember. That’s right, it was 2002; the city councillors came and made the galettes during the festival. We took turns. Our spouses helped out because sometimes we needed more people, and some of our friends, and volunteers who’d been there since the beginning of 2002. They came and helped make and serve the galettes. And we’ve been doing that since 2002.
